Waffles

  • 2 C flour
  • 1 Tab baking powder
  • 1 tsp baking soda
  • 1 Tab sugar
  • 1/3 C Oil
  • 1-2/3 C Buttermilk
  • 3 large eggs

In large bowl, mix dry ingredients and set aside.
In another bowl, beat eggs. Add milk and oil. When well mixed, add to dry ingredients and mix until smooth.

Cook in hot waffle iron.

For lighter/crispier waffles, beat the egg whites separate until soft peaks form and fold in after all other ingredients have been mixed.

Serve them dripping with honey or maple syrup!
