Viceroy Chicken Dinner

Based on the recipe presented on "Can't Smeg, Won't Smeg" by Ainsley Harriot

Cucumber Salad:

  • 1 large Cucumber, quartered, seeded, and sliced
  • 1 medium tomato, seeded and diced
  • 1 spring onion
  • 8 oz plain yogurt
  • Juice from ½ a lime

Blend all ingredients together. Can be prepared in advance and refrigerated.


Yellow Rice:

  • 2 cups Water
  • 1 cup basmati rice
  • 1 tsp salt
  • 2 tab Tumeric

Bring water to boil Add rice, salt, and tumeric. Lower to medium heat (simmer) and put lid on. Simmer for 20 minutes (or however long directions state for the rice you purchased. Take off burner and let sit for 5 minutes before serving.


Viceroy Chicken:

  • 1 Double Breast of Chicken, cut into bite-size pieces
  • Pinch of salt
  • 1 medium onion, sliced
  • 1 tab oil
  • 1 tab Garlic paste
  • 1 tab Curry Paste
  • 1 cup Chicken Stock
  • 1 cup coconut milk (Crème de coconut)
  • 1 tab Mango Chutney


In a large frying pan over med-high heat, place oil and onions. Add garlic paste. As onions start to brown, add Chicken, seasoned with salt. Be sure to stir frequently. When chicken is cooked all around, add the Curry paste and Chicken Stock. After 3-5 minutes, add Coconut milk. Simmer until chicken is cooked through (5-10 minutes - longer if pieces are larger). Blend in Mango chutney in last minute of cooking.

Directions for serving:

  • Fresh coriander, chopped fine
  • Fresh parsley, chopped fine
  • Paprika
  • Mini-Popadums
  • Mango chutney
  • Lime wedges

On each plate, place rice in center. Create a well in the center of the rice, Place Viceroy chicken in the well. Place a large spoonful of Cucumber salad in each of 4 "corners" of the place. Arrange mini-popadums around edge, each with a dollop of Mango chutney on it. Sprinkle a little of the coriander and Parsley on the viceroy chicken. Sprinkle Paprika over chicken and around edge of plate. Put a lime wedge on each plate.
