Viceroy Chicken Dinner

Based on the recipe presented on "Can't Smeg, Won't Smeg" by Ainsley Harriot
Blend all ingredients together. Can be prepared in advance and refrigerated.
Bring water to boil Add rice, salt, and tumeric. Lower to medium heat (simmer) and put lid on. Simmer for 20 minutes (or however long directions state for the rice you purchased. Take off burner and let sit for 5 minutes before serving.
On each plate, place rice in center. Create a well in the center of the rice, Place Viceroy chicken in the well. Place a large spoonful of Cucumber salad in each of 4 "corners" of the place. Arrange mini-popadums around edge, each with a dollop of Mango chutney on it. Sprinkle a little of the coriander and Parsley on the viceroy chicken. Sprinkle Paprika over chicken and around edge of plate. Put a lime wedge on each plate.
