Gazpacho Soup

- 2 lbs Ripe Tomatoes - blanched and peeled
- 1 Large Cucumber, peeled and chopped
- 1 green bell pepper, seeded and chopped
- 4 cloves garlic, minced
- 1 medium onion, minced
- ¼ cup Red Wine Vinegar
- ¼ cup Olive Oil
- ½ tsp salt
- 1 TAB fresh Cilantro finely chopped
- 1 tsp white pepper
- 40 oz Tomato Juice
Optional:
- 2 small jalapenos or Tabasco Peppers, seeded and minced
- OR -
- " ½ tsp Tabasco sauce
In a Food Mill (or food processor/blender), take half of the tomatoes, onions, bell pepper, and all of the garlic and jalapenos/Tabasco peppers (if used). Process until smooth. Strain (especially if Food Mill is not used, since a Food mill strains itself). Discard seeds and peel.
Whisk together vinegar and Olive oil into an emulsion. Add "juice" made before and whisk thoroughly. Blend in remaining ingredients. Chill for 2 - 4 hours before serving.
Serve with Chopped Cucumber, Bell Pepper, Jalapeno, Scallions, and croutons.
Piping Hot Option: Add 1 tsp Hot Pepper sauce, 2 additional cloves of minced Garlic, ½ tsp salt, 1 tsp white pepper, and the juice of ½ of a lime. Heat until piping hot (Just starting to boil), and serve immediately. Add sour cream as a condiment.
